Ergogenics Pumpkin Pecan Protein Bars

Ingredients:

  • 1 cup quick oats
  • 1 scoop Ergogenics chocolate protein powder
  • 1 ½ cups pumpkin puree, canned
  • 1 cup chopped pecans
  • 1 cup water or more
  • 3 medjool dates, pitted and soaked
  • 3 tbsp hemp hearts
  • 1 tbsp almond butter
  • 1 tbsp cinnamon
  • 1 tbsp cocoa or cacao powder
  • ¼ tsp maca powder
  • ¼ tsp salt
  • 1/2 tsp of baking soda
  • optional: 1 tbsp maple syrup


Directions:

  1. Preheat oven at 350°F.
  2. Blend all ingredients together in a food processor until smooth. Alternatively, just stir everything well in a large bowl.
  3. Once all ingredients are combined, transfer to a baking dish lined with parchment paper or coconut oil.
  4. Top with pecans and press them gently into the batter.
  5. Bake for 30 minutes at 350°F.
  6. Let cool before cutting into squares.
